
The lasagna was a success! This recipe is definitely a keeper.
The only big-picture changes I made were A) add a bag of baby spinach, chopped, to the sauce; B) liberally douse the sauce with some red wine; and C) divide the ingredients into three 9x9 baking dishes instead of using one 9x13 pan.
Now we have one pan of lasagna for dinner, one for the freezer to use at a later date, and one to give to friends who just had a new baby. They don't know it yet but I'm going to selfishly request to hold that baby for as long as I can in exchange for their dinner. It'll be great.
