
I nailed it this time, friends, if I do say so myself.
Like many people, the mojito is a favorite summer time cooler. Last night, at the Bagdad, I was enjoying one when it hit me: mojito frozen yogurt. So today, while out & about, I picked up the ingredients and then came home & made it happen. Here's how you can, too:
Mojito Frozen Yogurt
1 large or 2 small ripe mangoes, peeled & cut into cubes*
1 handful (half a package) of fresh mint, chopped up
zest of 2 limes and juice of 1/2 a lime (or to taste)
3/4 c. sugar
2 c. plain greek yogurt
Combine all ingredients in a mixer or food processor until smooth. Chill for an hour, then freeze in your ice cream maker according to the manufacturer's directions.
*The mango adds more of a smooth, sweet creaminess and less mango flavor than you might expect. In other words, I wouldn't call this mango frozen yogurt with mint & lime because you can't really taste the mango.
