A new favorite dinner

So last night I made those taco ramekins/cups (first mentioned here) and they were magnifique, if I do say so myself. Original inspiration came from this recipe, which I modified significantly. The only thing I'd change about my version is the name. Any ideas?

Taco Cups
- 9 frozen Rhodes white dinner rolls, fully defrosted
- 1 lb. ground beef
- 1 packet taco seasoning
- 1 can kidney beans, drained & rinsed
- 1 1/2 c. frozen corn
- 1/2 - 1 c. salsa
- 1/2 c. each sour cream, mayonnaise, and shredded cheddar cheese - mix together & set aside
- garnish: 1 small can diced green chiles, pickled jalapeno slices, or sliced black olives

Special equipment: (9) 7 oz. ramekins or 2 large muffin pans (6 cups per pan, 6 oz. capacity each)*

Pre-heat oven to 375 degrees and lightly grease ramekins/muffin pans.

On a floured surface, roll each dinner roll into a flat circle about 1/8" thick or about 5" in diameter (approx.). Stack and set aside.

In a skillet, cook beef over medium heat until no longer pink; drain. Add in the taco seasoning, beans, and corn. Mix well and heat through.

Place one flattened dinner roll into each ramekin/muffin cup, pressing the dough against the bottoms and sides of the cups. If the dough doesn't reach all the way up the sides, that's OK! Mine didn't. Fill the ramekins/muffin cups about 3/4 full with the beef mixture. Spoon 1 -2T. salsa into each cup over the beef mixture, and top with several spoonfuls of the sour cream mixture. Garnish with chiles, jalapenos, or olives.

Bake for about 15 minutes or until the dough is cooked through and the sour cream mixture has melted. Let rest for a few minutes before serving.

*Since I just have one large muffin pan (and no ramekins) I made six "cups" and saved the rest of the beef filling for tacos later in the week.

This sounds delicious! Thanks for posting! It makes me think Taco Pockets would also be good. Sort of like a calzone, but with the ingredients you used here.
