Quick summer dessert


Trust me when I say this little concoction is marvelously tasty, quick to prepare, impressive to look at, and low in fat. I usually shy away from low-fat desserts because, hey, what fun is that? But this one evolved as a result of what I had on hand, not out of a desire to eat healthy desserts.

It was inspired by Italian sodas, which are soda water+cream+flavored syrup. In my version, I replace the cream with vanilla frozen yogurt and the syrup with fresh berries. Now that I think about it, perhaps this is a well-known treat, but it's new to me and I love it and am very eager to share.

Here we go.

Fruit & soda float
makes 1 serving

1/2 c. vanilla frozen yogurt
1/3 c. fresh, chopped summer berries tossed lightly with sugar
1/4 c. lemon Perrier or other flavored soda water

Scoop in the frozen yogurt into a
pretty wine glass or other occasional & festive vessel. Top with the berries and then the soda. Serve with a smile and a spoon. Enjoy.

Would this work well with some sparkling bubbly in place of the soda water? You bet!
