Summer cooking - no oven needed


This is the first weekend I've been home in a month. And what do I go and do? Cook up a storm. Well, actually, I pureed up a storm with my food processor. Because it's hot. There's no room for an oven in the house when its this hot. So I zip zip a few tasties (quick recipes below) and then pop 'em in the fridge.

Here we go.

First, race over to Kalyn's Kitchen for her sun-dried tomato pesto recipe. Quick! Serve it with pita chips & veggies.

Second, go and make chilled cantaloupe soup by pureeing one large, ripe cantaloupe (peeled, seeded & chopped, people) with 1/3 c. OJ & zest & juice from half a lime. To serve, dollop a spoonful of yogurt & mint pesto (fresh mint leaves + olive oil + lime zest & juice, blended in food processor) on top. Yum.

Third, have some cool & refreshing gazpacho. Toss the following in a food processor (yes, again) and serve cold: 1 chopped red bell pepper, 1 chopped small onion, 1 chopped cucumber (I leave the skin on & the seeds in), 3 cloves of garlic, 1-30 oz. can tomatoes, pinch of salt, handful of fresh cilantro (or other fresh herb), 1 splash olive oil, 2 splashes vinegar, and 1/2 splash of hot sauce.

Doesn't get much better than having a container of each of these babies in the fridge to pull out when its hot & you're hungry.
